Cajun Sausage and Beans
Ingredients
- 1 lb. Turkey, Smoked or, Andouille Sausage, sliced into 1/2 inch slices
- 1-2 cups cooked, left over THE Rice
- 1 can (15 oz.) red kidney beans, rinsed and drained
- 1 can (15 oz.) diced tomatoes
- 2 celery stalks, chopped
- 1 green bell pepper, chopped
- 1 onion, chopped in the food processor
- 1/2 teaspoon of salt
- About 2 teaspoons of Cajun Seasoning
- 2 tablespoons of jarred minced garlic
- 1-2 tablespoons of olive oil
- 1/2 cup (4 fl. oz) of water
- salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sausage and cook until browned. Set aside.
- Add more olive oil to the skillet if needed. Add the green peppers, onion, and celery to the skillet along with the salt. Toss in half the Cajun seasoning. Cook until tender.
- Add the garlic and cook for about 30 seconds.
- Add the beans, tomatoes, water, rice, along with the rest of the Cajun seasoning. Simmer for about 10 minutes.
- Stir back in the sausage. Let it warm if needed.
- Sprinkle some salt and pepper to your taste.
